Ingredients

  • 1 lb Chicken Breast (cut into 1-inch cubes)
  • 1/2 cup Coconut Milk
  • 2 tablespoons Red Curry Paste
  • 1 tablespoon Fish Sauce
  • 2 tablespoons Lime Juice
  • 1 tablespoon Brown Sugar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 12 Wooden Skewers (soaked in water)
  • 1/4 cup Sunflower Seed Butter
  • 2 tablespoons Coconut Aminos
  • 1 tablespoon Rice Vinegar
  • 1/2 teaspoon Sriracha

Instructions

  1. 1In a medium bowl, whisk together the 1/2 cup coconut milk, 2 tablespoons red curry paste, 1 tablespoon fish sauce, 2 tablespoons lime juice, 1 tablespoon brown sugar, 2 cloves minced garlic, and 1 teaspoon grated ginger until well combined.
  2. 2Add the 1 lb chicken breast cubes to the bowl with the marinade. Use your hands or a spoon to ensure all the chicken pieces are completely coated. Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes.
  3. 3While the chicken is marinating, prepare the dipping sauce. In a separate small bowl, whisk together the 1/4 cup sunflower seed butter, 2 tablespoons coconut aminos, 1 tablespoon rice vinegar, and 1/2 teaspoon sriracha until smooth. Add 1 tablespoon of water and whisk. Continue adding water, 1 tablespoon at a time, until the sauce reaches your desired dipping consistency.
  4. 4Remove the chicken from the refrigerator. Thread the marinated chicken cubes onto the 12 wooden skewers, which have been soaked in water. Aim for about 3-4 pieces of chicken per skewer.
  5. 5Preheat your grill or a grill pan to medium-high heat. If using a grill pan, ensure it is large enough to hold all the skewers without overcrowding.
  6. 6Place the chicken skewers on the hot grill or grill pan. Cook for 3 to 4 minutes per side. The chicken is done when it is cooked through and has a slightly charred exterior. The internal temperature should reach 165°F (74°C).
