Teff Crepes with Berbere Spiced Lentil Filling

Ingredients

  • 1 cup Teff Flour
  • 2 cups Water
  • 1/4 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 1 cup Red Lentils
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Berbere Spice Blend
  • 2 cups Vegetable Broth
  • 1 tablespoon Lemon Juice

Instructions

  1. 1In a bowl, whisk together teff flour, water, and salt until smooth. Let batter rest for 15 minutes.
  2. 2Heat a lightly oiled crepe pan or skillet over medium heat.
  3. 3Pour a thin layer of batter onto the hot pan and cook for 1-2 minutes per side, or until golden brown.
  4. 4While crepes are cooking, prepare the lentil filling: Rinse lentils. Sauté diced onion and garlic in olive oil until softened.
  5. 5Stir in berbere spice blend and cook for 1 minute. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender and most of the liquid is absorbed.
  6. 6Stir in lemon juice. Fill each crepe with the lentil mixture and serve.
