Ingredients

  • 1 cup Teff Flour
  • 1 cup Water
  • 1/2 tsp Salt
  • 2 item Avocados
  • 1/4 cup Red Onion, finely chopped
  • 1/2 cup Tomato, diced
  • 2 tbsp Cilantro, chopped
  • 2 tbsp Lime Juice
  • 1/2 item Jalapeno, minced (optional)
  • 2 tbsp Olive Oil

Instructions

  1. 1In a bowl, mix teff flour, water, and salt until a smooth dough forms. Let rest for 15 minutes.
  2. 2Divide the dough into 4 equal portions. Shape each portion into a small, flat circle.
  3. 3Heat olive oil in a skillet over medium heat.
  4. 4Cook the teff arepas for about 5-7 minutes per side, or until golden brown and cooked through.
  5. 5While the arepas are cooking, prepare the avocado salsa. Mash the avocados and mix with red onion, tomato, cilantro, lime juice, and jalapeno (if using).
  6. 6Top each teff arepa with the avocado salsa and serve immediately.
