Ingredients

  • 2 medium Sweet Potatoes (Diced)
  • 4 oz Tasso Ham (Diced)
  • 1/2 cup Red Onion (Diced)
  • 1 cup Bell Pepper (Diced)
  • 2 cloves Garlic (Minced)
  • 2 tbsp Olive Oil
  • 1 tbsp Cajun Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Green Onions (Sliced, for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add sweet potatoes, red onion, and bell pepper. Cook until sweet potatoes are tender and slightly browned, about 15-20 minutes, stirring occasionally.
  2. 2Add tasso ham and garlic to the skillet. Cook for another 5 minutes, stirring occasionally, until ham is slightly crispy.
  3. 3Season with Cajun seasoning, salt, and pepper. Stir well to combine.
  4. 4Serve hot, garnished with green onions.
