Ingredients

  • 2 cans Coconut milk, full fat
  • 0.5 cup Sugar
  • 1/4 cup Cornstarch
  • 2 cups Poi (Taro pudding)
  • 1 cup Cooked Taro Root, diced
  • 1/4 cup Toasted Coconut Flakes

Instructions

  1. 1To make the Haupia, combine the 2 cans of full-fat coconut milk, 0.5 cup of sugar, and 1/4 cup of cornstarch in a medium saucepan. Whisk these ingredients together until smooth.
  2. 2Place the saucepan over medium heat. Cook the mixture, stirring constantly, for about 5 to 10 minutes, or until it thickens to a pudding-like consistency and just begins to simmer. Remove the saucepan from the heat and let the haupia cool slightly for about 5 minutes.
  3. 3To assemble the parfaits, spoon a layer of the 2 cups of poi into the bottom of four parfait glasses.
  4. 4Add a layer of the 1 cup of cooked taro root, diced, on top of the poi in each glass.
  5. 5Spoon a layer of the slightly cooled haupia mixture over the diced taro in each glass.
  6. 6Repeat the layers: add another layer of poi, followed by another layer of diced taro, and finish with a final layer of haupia.
  7. 7Garnish the top of each parfait with the 1/4 cup of toasted coconut flakes.
