Tanzanian Vitumbua (Coconut Rice Pancakes)

Ingredients

  • 1 cup Rice Flour
  • 1 cup Coconut Milk
  • 1/4 cup Sugar
  • 1/4 tsp Cardamom
  • 1/2 tsp Baking Powder
  • 2 tbsp Vegetable Oil

Instructions

  1. 1In a medium bowl, add the 1 cup of Rice Flour, 1 cup of Coconut Milk, 1/4 cup of Sugar, 1/4 tsp Cardamom, and 1/2 tsp Baking Powder. Whisk everything together until the batter is completely smooth.
  2. 2Place a non-stick griddle or frying pan on the stove over medium heat. Add 2 tbsp of Vegetable Oil to the pan and let it heat up for 1 minute.
  3. 3Pour about 1/4 cup of the batter onto the hot griddle for each pancake. Make them small, about 3 inches across.
  4. 4Cook the pancakes for 2 to 3 minutes on the first side. You will see small bubbles forming on the surface, and the edges will start to look set. Flip the pancakes carefully.
  5. 5Cook the pancakes for another 2 to 3 minutes on the second side, until they are golden brown and puffed up. They should feel slightly firm to the touch.
  6. 6Remove the Tanzanian Vitumbua from the griddle and serve them warm.
