Ingredients

  • 1 cup Cooked Rice
  • 1 cup Coconut Milk
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Sugar
  • 1/4 teaspoon Cardamom Powder
  • 1/2 teaspoon Baking Powder
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1Place the 1 cup Cooked Rice, 1 cup Coconut Milk, 1/2 cup All-Purpose Flour, 1/4 cup Sugar, 1/4 teaspoon Cardamom Powder, and 1/2 teaspoon Baking Powder into a blender.
  2. 2Blend these ingredients on high speed until the mixture is completely smooth, with no visible lumps of rice or flour remaining.
  3. 3Heat a griddle or a large frying pan over medium heat until it reaches approximately 350°F (175°C). Add the 2 tablespoons Vegetable Oil to the hot pan and spread it evenly to lightly coat the entire cooking surface.
  4. 4Pour 1/4 cup of the prepared batter onto the hot, oiled griddle for each pancake, ensuring there is enough space between them to flip easily.
  5. 5Cook each pancake for 2 to 3 minutes on the first side, until the edges appear set and the surface shows small bubbles.
  6. 6Carefully flip each pancake and cook for another 2 to 3 minutes on the second side, until both sides are golden brown and the pancake is cooked through to the center.
