Ingredients

  • 1 can Red beans
  • 1 can Coconut milk
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Curry powder
  • 0.5 tsp Cumin
  • 0.25 tsp Turmeric
  • 1 cup Vegetable broth
  • 2 tbsp Vegetable oil
  • 0.5 tsp Salt
  • 2 tbsp Cilantro

Instructions

  1. 1Rinse red beans in a colander.
  2. 2Chop onion, mince garlic, and grate ginger.
  3. 3Heat vegetable oil in a pot over medium heat.
  4. 4Add onion, garlic, and ginger and sauté until softened.
  5. 5Stir in curry powder, cumin, and turmeric and cook for 1 minute.
  6. 6Add red beans, coconut milk, and vegetable broth. Bring to a simmer.
  7. 7Cover and simmer for 30 minutes, or until soup has thickened.
  8. 8Season with salt to taste.
  9. 9Garnish with cilantro and serve hot.
