Tanzanian Coconut Bean Soup

Ingredients

  • 1 cup Dried kidney beans
  • 2 cans Coconut milk
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Cumin
  • 0.5 tsp Coriander
  • 0.5 tsp Turmeric
  • 2 cups Vegetable broth
  • 2 tbsp Vegetable oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Soak kidney beans in water overnight.
  2. 2Drain and rinse soaked kidney beans. Cook the beans until soft.
  3. 3Heat vegetable oil in a large pot over medium heat.
  4. 4Add chopped onion, garlic, and ginger and sauté until softened, about 5 minutes.
  5. 5Stir in cumin, coriander, and turmeric.
  6. 6Add cooked kidney beans, coconut milk, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  7. 7Season with salt and pepper to taste. Serve hot.
