Ingredients

  • 1 lb Firm Tofu
  • 4 cups Vegetable Broth
  • 1/2 cup Vegan Kimchi
  • 1/4 cup Dried Shiitake Mushrooms
  • 2 tbsp Soy Sauce (Gluten-Free Tamari)
  • 1 tbsp Rice Vinegar
  • 1 tbsp Chili Garlic Sauce
  • 2 tbsp Vegetable Oil
  • 1/2 cup Pickled Cabbage
  • 1/4 cup Cilantro

Instructions

  1. 1Press the tofu to remove excess water, then cut into 1-inch cubes.
  2. 2In a pot, combine vegetable broth, vegan kimchi, and dried shiitake mushrooms. Bring to a boil, then simmer for 15 minutes to create a flavorful broth.
  3. 3Add the tofu cubes to the broth and simmer for another 10 minutes to infuse the tofu with flavor.
  4. 4Remove the tofu from the broth and pat dry.
  5. 5Heat vegetable oil in a pan over medium-high heat. Fry the tofu until golden brown and crispy on all sides.
  6. 6Serve hot, topped with pickled cabbage, cilantro, and a drizzle of tamari, rice vinegar, and chili garlic sauce.
  7. 7Serve hot.
