Taiwanese Sticky Rice Sausage (Da Chang Bao Xiao Chang)

A street food consisting of a Taiwanese sausage wrapped in a sticky rice sausage. The sticky rice sausage takes the place of the bun.

Ingredients

  • 2 links Taiwanese Sausage (pork or vegetarian)
  • 1 cup Sticky Rice (sweet rice)
  • 4 Dried Shiitake Mushrooms
  • 2 tbsp Dried Shrimp
  • 2 Shallots
  • 2 tbsp Soy Sauce
  • 1 tbsp Vegetable Oil
  • 2 tbsp Cilantro

Instructions

  1. 1Place the 1 cup of sticky rice in a bowl and cover with water. Let it soak for at least 2 hours, or preferably overnight. In a separate bowl, cover the 4 dried shiitake mushrooms and 2 tbsp dried shrimp with warm water and let them soak until softened, about 20-30 minutes. Drain the sticky rice.
  2. 2Place the drained sticky rice in a steamer basket lined with cheesecloth or parchment paper. Steam over medium-high heat at 212°F (100°C) for 20-30 minutes, or until the rice is tender and cooked through. While the rice is steaming, finely chop the soaked and drained shiitake mushrooms, the soaked and drained dried shrimp, and the 2 shallots.
  3. 3Heat the 1 tbsp of vegetable oil in a 10-inch skillet over medium heat (350°F/175°C). Add the chopped shiitake mushrooms, dried shrimp, and shallots to the skillet. Sauté for 3-5 minutes, stirring frequently, until the mixture is fragrant.
  4. 4In a large bowl, combine the steamed sticky rice, the sautéed mushroom and shrimp mixture, and the 2 tbsp of soy sauce. Mix everything thoroughly until well combined.
  5. 5Divide the sticky rice mixture in half. Shape each half into a sausage shape, roughly the size of the 2 Taiwanese sausages. Wrap each sticky rice sausage tightly in plastic wrap.
  6. 6Place the wrapped sticky rice sausages in a steamer basket. Steam over medium-high heat at 212°F (100°C) for 15 minutes, or until heated through. Remove from the steamer and let them cool slightly before unwrapping.
  7. 7While the sticky rice sausages are steaming, cook the 2 Taiwanese sausages. Grill or pan-fry them over medium heat (350°F/175°C) for 8-12 minutes, turning occasionally, until they are cooked through and browned on all sides. If pan-frying, use a 10-inch skillet.
  8. 8Once the Taiwanese sausages are cooked and the sticky rice sausages are unwrapped, carefully slice each sticky rice sausage open lengthwise, being careful not to cut all the way through. Place one cooked Taiwanese sausage inside each split sticky rice sausage.
  9. 9Garnish the stuffed sticky rice sausages with the 2 tbsp of cilantro and serve immediately.
