Ingredients

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3/4 cup Water
  • 4 cups Vegetable Oil
  • 4 cups Unsweetened Soy Milk

Instructions

  1. 1In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  2. 2Gradually add water, mixing until a shaggy dough forms. Knead the dough for about 5-7 minutes until smooth and elastic.
  3. 3Cover the dough and let it rest for at least 2 hours, or overnight, in the refrigerator.
  4. 4Heat vegetable oil in a deep pot or wok to 350°F (175°C).
  5. 5On a lightly floured surface, gently stretch the dough into a rectangle about 1/4 inch thick.
  6. 6Cut the dough into strips about 1 inch wide and 4 inches long.
  7. 7Stack two strips of dough on top of each other and gently press down the center with a chopstick or the back of a knife.
  8. 8Carefully drop the dough into the hot oil, frying for about 2-3 minutes per side, or until golden brown and puffed up.
  9. 9Remove the fried dough sticks and drain on paper towels.
  10. 10Serve warm with warmed unsweetened soy milk.
