Taiwanese Savory Soy Milk (Xian Dou Jiang)

Ingredients

  • 2 cups Unsweetened soy milk
  • 2 teaspoons White vinegar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Dried shrimp
  • 2 tablespoons Pickled radish
  • 1 piece Chinese fried dough sticks (youtiao)
  • 1 tablespoon Chopped scallions
  • 1 teaspoon Chili oil

Instructions

  1. 1Place a 2-quart saucepan over medium heat. Add the 2 cups of unsweetened soy milk to the saucepan. Heat the soy milk until it is warm to the touch, about 140°F (60°C). Do not let it boil.
  2. 2While the soy milk is heating, measure and add the 2 teaspoons of white vinegar and 1 tablespoon of soy sauce into each of the two serving bowls.
  3. 3Carefully pour the warm soy milk from the saucepan into each of the two serving bowls. The heat from the soy milk will react with the vinegar, causing it to curdle slightly.
  4. 4Add the 1 tablespoon of dried shrimp, 2 tablespoons of pickled radish, and 1 piece of Chinese fried dough sticks (youtiao), broken into bite-sized pieces, to each bowl.
  5. 5Sprinkle the 1 tablespoon of chopped scallions over the top of each bowl.
  6. 6If desired, drizzle the 1 teaspoon of chili oil over the top of each serving. Serve immediately.
