Ingredients

  • 1 cup White rice
  • 8 cups Water
  • 2 slices Ginger
  • 1/2 tsp Salt
  • 1/4 tsp White pepper
  • 1 tsp Sesame oil
  • 1/2 cup Pickled radish

Instructions

  1. 1Measure the 1 cup of white rice into a fine-mesh sieve and rinse it under cool running water until the water runs clear.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1 cup of white rice, 8 cups of water, and the 2 slices of ginger.
  3. 3Place the pot over high heat and bring the mixture to a rolling boil, which should take about 5-7 minutes. Once boiling, immediately reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 40-45 minutes. The porridge is ready when the rice grains are very soft and have broken down, creating a thick, creamy consistency.
  4. 4Remove and discard the 2 slices of ginger from the pot. Stir in the 1/2 teaspoon of salt, 1/4 teaspoon of white pepper, and 1 teaspoon of sesame oil until fully combined.
  5. 5Ladle the hot Taiwanese rice porridge into individual serving bowls. Top each bowl with about 2 tablespoons of the 1/2 cup of pickled radish before serving.
