Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Soy Sauce
  • 1 tbsp Rice Wine
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 tsp Five Spice Powder
  • 0.5 tsp White Pepper
  • 1 cup Tapioca Starch
  • 0.5 cup Potato Starch
  • 1 tsp Baking Powder
  • 3 cups Vegetable Oil
  • 0.25 cup Basil Leaves

Instructions

  1. 1Cut chicken thighs into 1-inch pieces.
  2. 2In a bowl, marinate chicken with soy sauce, rice wine, minced garlic, grated ginger, five spice powder, and white pepper for at least 30 minutes.
  3. 3In another bowl, combine tapioca starch, potato starch, and baking powder.
  4. 4Coat marinated chicken pieces thoroughly with the starch mixture.
  5. 5Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. 6Fry chicken in batches for 3-4 minutes, or until golden brown and cooked through.
  7. 7Remove chicken and drain on paper towels.
  8. 8Garnish with fresh basil leaves and serve immediately.
