Taiwanese Oyster Omelet (Gluten-Free, Nut-Free)

A popular Taiwanese street food made gluten-free and nut-free. Uses tapioca starch for binding and rice flour for texture.

Ingredients

  • 1/2 cup Oysters
  • 2 tbsp Tapioca Starch
  • 1 tbsp Rice Flour
  • 1/4 cup Water
  • 2 large Eggs
  • 2 tbsp Vegetable Oil
  • 2 stalks Green Onions
  • 1/2 cup Soybean Sprouts
  • 1 tbsp Sweet Potato Starch
  • 2 tbsp Gluten-Free Sweet Chili Sauce
  • 2 tbsp Cilantro

Instructions

  1. 1In a bowl, combine tapioca starch, rice flour, and water. Mix well.
  2. 2Heat vegetable oil in a large skillet or wok over medium heat.
  3. 3Add soybean sprouts and stir-fry for 1 minute.
  4. 4Pour the starch mixture over the soybean sprouts.
  5. 5Arrange oysters on top of the mixture.
  6. 6Pour beaten eggs over the oysters and starch mixture.
  7. 7Cook until the omelet is set and lightly browned on the bottom, about 3-4 minutes.
  8. 8Flip the omelet and cook for another 2-3 minutes.
  9. 9Serve with sweet potato starch sauce, sweet chili sauce, green onions and cilantro.
