Ingredients

  • 1/2 cup Mung Beans
  • 3 cups Water
  • 2 cups Dairy-Free Milk (Soy, Almond, or Oat)
  • 2 tablespoons Sugar

Instructions

  1. 1Rinse the mung beans and soak them in water for at least 2 hours.
  2. 2Drain the beans and cook them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the beans are soft and mushy.
  3. 3Let the beans cool slightly.
  4. 4Transfer the cooked beans and some of the cooking liquid to a blender.
  5. 5Blend until smooth. Add the dairy-free milk and sugar.
  6. 6Blend again until well combined.
  7. 7Serve chilled or over ice.
