Taiwanese Mochi (Nut-Free)

Ingredients

  • 1 cup Sweet Glutinous Rice Flour (Mochiko)
  • 0.5 cup Sugar
  • 1 cup Water
  • 0.5 cup Sweet Potato Flour (for dusting)

Instructions

  1. 1In a microwave-safe bowl, combine glutinous rice flour, sugar, and water. Mix well.
  2. 2Cover the bowl with plastic wrap and microwave for 2 minutes. Stir well.
  3. 3Microwave for another 1-2 minutes, or until the mochi is translucent and stretchy. Stir well.
  4. 4Dust a clean surface with sweet potato flour.
  5. 5Transfer the mochi to the floured surface and let it cool slightly.
  6. 6Cut the mochi into small pieces and dust with more sweet potato flour.
  7. 7Serve immediately.
