Taiwanese Braised Shiitake Mushrooms (Soy-Free)

Ingredients

  • 1 oz Dried Shiitake Mushrooms
  • 2 cups Water
  • 1 cup Vegetable Broth
  • 2 tbsp Coconut Aminos
  • 1 tbsp Rice Wine
  • 2 slices Ginger
  • 2 cloves Garlic
  • 1 tsp Sesame Oil
  • 2 Green Onions

Instructions

  1. 1Soak dried shiitake mushrooms in hot water for 30 minutes, or until softened. Drain and reserve the soaking liquid.
  2. 2In a pot, combine vegetable broth, coconut aminos, rice wine, ginger, and garlic. Add the soaked shiitake mushrooms and reserved soaking liquid (strain first to remove any sediment).
  3. 3Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until mushrooms are tender and the sauce has thickened.
  4. 4Stir in sesame oil. Garnish with chopped green onions. Serve warm or at room temperature.
