Ingredients

  • 2 lbs Beef Shank
  • 8 cups Beef Bone Broth
  • 1 lb Shirataki Noodles
  • 1/4 cup Soy Sauce
  • 2 tbsp Tomato Paste
  • 3 whole Star Anise
  • 2 inch Ginger
  • 4 cloves Garlic
  • 2 stalks Green Onions
  • 1 tbsp Swerve (Sugar Substitute)
  • 1 tbsp Chili Bean Sauce (Toban Djan)

Instructions

  1. 1Peel and slice the 2 inch Ginger into 1/4-inch rounds, or smash it gently. Peel and smash the 4 cloves Garlic. Separate the 2 stalks Green Onions into white and green parts; slice the white parts into 1-inch pieces and thinly slice the green parts for garnish.
  2. 2Bring a large pot of water to a rolling boil over high heat (212°F / 100°C). Carefully add the 2 lbs Beef Shank to the boiling water and blanch for 5 minutes. Remove the beef shank from the pot, drain the water, and rinse the beef shank thoroughly under cold running water to remove any impurities.
  3. 3In a large heavy-bottomed pot (at least 6-quart capacity), combine the 8 cups Beef Bone Broth, 1/4 cup Soy Sauce, 2 tbsp Tomato Paste, 3 whole Star Anise, the prepared 2 inch Ginger, the prepared 4 cloves Garlic, the white parts of the 2 stalks Green Onions, 1 tbsp Swerve (Sugar Substitute), and 1 tbsp Chili Bean Sauce.
  4. 4Add the rinsed 2 lbs Beef Shank to the pot with the broth mixture. Bring the liquid to a rolling boil over high heat (212°F / 100°C). Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer gently for 2 hours, or until the beef shank is very tender and can be easily pierced with a fork.
  5. 5Carefully remove the cooked 2 lbs Beef Shank from the pot and place it on a cutting board. Let it cool for 10-15 minutes, which makes it easier to handle, then use two forks to shred the beef into bite-sized pieces. While the beef cools, open the package of 1 lb Shirataki Noodles, drain the liquid, and rinse them thoroughly under cold running water for 1-2 minutes, then drain them well again.
  6. 6Divide the prepared 1 lb Shirataki Noodles evenly among 4 serving bowls. Top each bowl with the shredded beef. Ladle the hot broth from the pot over the noodles and beef, and garnish each serving with the thinly sliced green parts of the 2 stalks Green Onions.
