Ingredients

  • 2 lbs Beef Shank
  • 8 cups Beef Broth
  • 1/4 cup Soy Sauce (Low Sodium)
  • 1 tbsp Dark Soy Sauce
  • 2 tbsp Rice Wine (Shaoxing)
  • 3 slices Ginger
  • 4 cloves Garlic
  • 2 pieces Star Anise
  • 1 piece Cinnamon Stick
  • 1 tbsp Swerve (or other Keto Sweetener)
  • 16 oz Shirataki Noodles
  • 1 head Bok Choy
  • 2 stalks Scallions

Instructions

  1. 1Blanch beef shank in boiling water for 5 minutes, then drain.
  2. 2In a large pot, combine beef shank, beef broth, soy sauce, dark soy sauce, rice wine, ginger, garlic, star anise, cinnamon stick, and Swerve.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours, or until beef is very tender.
  4. 4Remove beef shank from the pot and shred the meat. Discard bones and connective tissue.
  5. 5Add shirataki noodles and bok choy to the broth and cook until noodles are heated through and bok choy is tender.
  6. 6Return shredded beef to the pot.
  7. 7Garnish with scallions and serve.
