Taho (Silken Tofu with Syrup and Sago)

A popular Filipino street food snack made with soft silken tofu, sweet syrup (arnibal), and small tapioca pearls (sago). A naturally peanut-free delight!

Ingredients

  • 1 package (12oz) Silken Tofu
  • 1 cup Water
  • 1/2 cup Brown Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1/4 cup Sago (Tapioca Pearls)

Instructions

  1. 1In a medium saucepan, bring 1 cup of water to a rolling boil over high heat. Add the 1/4 cup sago (tapioca pearls) and cook, stirring occasionally, for 15 to 20 minutes, or until the pearls are translucent. Drain the cooked sago in a fine-mesh sieve and rinse them under cold running water to stop the cooking and prevent sticking. Set aside.
  2. 2In a separate small saucepan, combine 1 cup of water and the 1/2 cup brown sugar. Place over medium-high heat and bring to a boil, stirring until the sugar dissolves. Reduce the heat to low and simmer gently for 5 minutes, or until the syrup has slightly thickened. Stir in the 1/2 teaspoon vanilla extract. Remove from heat and set aside.
  3. 3Carefully open the 1 package (12oz) silken tofu. Gently scoop the silken tofu into two serving bowls, trying to keep the tofu pieces as intact as possible.
  4. 4Spoon the cooked 1/4 cup sago over the silken tofu in each bowl.
  5. 5Drizzle the arnibal syrup generously over the sago and tofu in both bowls.
  6. 6Serve immediately.
