Ingredients

  • 3 cups Rolled oats
  • 4 medium Apples, peeled and diced
  • 3 cups Almond milk
  • 1/2 cup Maple syrup
  • 2 tablespoons Chia seeds
  • 6 tablespoons Water
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2 tablespoons Vegan butter, melted

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a small bowl, combine the 2 tablespoons Chia seeds with the 6 tablespoons Water. Stir them together and let the mixture sit for 10 minutes until it thickens into a gel-like consistency.
  3. 3In a large mixing bowl, combine the 3 cups Rolled oats, the 4 medium Apples (peeled and diced), the 3 cups Almond milk, the 1/2 cup Maple syrup, the 1 teaspoon Cinnamon, and the 1/4 teaspoon Nutmeg.
  4. 4Add the prepared chia seed mixture and the 2 tablespoons melted Vegan butter to the large bowl with the oat mixture. Stir everything together thoroughly until all ingredients are well combined.
  5. 5Pour the entire mixture evenly into a 9x13 inch baking dish.
  6. 6Bake for 35 to 40 minutes, or until the top of the oatmeal is golden brown and the center appears set and firm when gently pressed.
  7. 7Carefully remove the baking dish from the oven and let the baked oatmeal cool slightly for at least 10 minutes before serving.
