Ingredients

  • 1 cup Rolled Oats
  • 1 cup Plant-Based Milk
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Baking Powder
  • 2 tbsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Flaxseed Meal
  • 2 medium Apples
  • 1/2 tsp Cinnamon

Instructions

  1. 1In a blender, combine the rolled oats, plant-based milk, apple cider vinegar, baking powder, maple syrup, vanilla extract, and flaxseed meal. Blend until smooth.
  2. 2Let the batter sit for 5 minutes to allow the flaxseed meal to thicken.
  3. 3While the batter is resting, peel, core, and chop the apples. In a small saucepan, combine the chopped apples with a splash of water and the cinnamon. Cook over medium heat until the apples are soft and tender, about 10 minutes.
  4. 4Heat a lightly oiled griddle or skillet over medium heat.
  5. 5Pour 1/4 cup of batter onto the hot griddle for each pancake.
