Ingredients

  • 1.5 lbs Potatoes (diced)
  • 8 oz Swiss Chard (chopped)
  • 8 oz Vegan Sausage (sliced)
  • 1/2 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes (optional)

Instructions

  1. 1Place a 12-inch skillet over medium heat. Add the 2 tablespoons of olive oil and heat until it shimmers, about 1 minute.
  2. 2Add the 1.5 lbs of diced potatoes to the hot skillet. Cook, stirring occasionally, until the potatoes are tender and have golden-brown edges, about 10 to 12 minutes.
  3. 3Add the 1/2 medium chopped onion and the 2 cloves of minced garlic to the skillet with the potatoes. Cook, stirring frequently, until the onion is softened and translucent, about 5 minutes.
  4. 4Add the 8 oz of sliced vegan sausage to the skillet. Cook, stirring occasionally, until the sausage is heated through and lightly browned, about 5 minutes.
  5. 5Stir in the 8 oz of chopped Swiss chard. Cook, stirring gently, until the Swiss chard has wilted down, about 3 to 5 minutes.
  6. 6Season the hash with the 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes (if using). Stir everything together to combine.
  7. 7Serve the Swiss chard and potato hash hot.
