Ingredients

  • 2 cups Glutinous rice
  • 1 cup Grated coconut
  • 1/2 cup Roasted peanuts
  • 1/4 cup Sesame seeds
  • 1/2 cup Sugar
  • 1/4 tsp Salt
  • 6 sheets Banana leaves

Instructions

  1. 1Place the 2 cups of glutinous rice in a large bowl and cover it completely with plenty of water. Allow the rice to soak for at least 4 hours, or until the grains feel noticeably softened when pressed.
  2. 2Drain the soaked glutinous rice thoroughly. Transfer the drained rice to a steamer basket. Place the steamer basket over a pot of water and bring the water to a boil over medium-high heat (212°F/100°C). Steam the rice for 20-30 minutes, or until it is cooked through, has a sticky and tender texture, and you can easily mash a grain between your fingers.
  3. 3Carefully transfer the hot, steamed rice to a large mixing bowl. Immediately add the 1 cup of grated coconut, 1/2 cup of roasted peanuts, 1/4 cup of sesame seeds, 1/2 cup of sugar, and 1/4 teaspoon of salt to the hot rice. Mix all the ingredients together thoroughly with a sturdy spoon or spatula until they are evenly distributed and the sugar has completely dissolved.
  4. 4Prepare your steamer for the second steaming: line the base of the steamer with the 6 sheets of banana leaves, overlapping them to create a continuous surface. Fill the steamer with water and bring it to a boil over medium-high heat (212°F/100°C).
  5. 5Take approximately 1/2 cup of the warm rice mixture and place it in the center of one of the 6 sheets of banana leaves. Fold the banana leaf tightly around the rice mixture to form a neat, sealed package. Repeat this process until all the rice mixture is used and wrapped.
  6. 6Carefully place the wrapped rice cakes into the prepared steamer. Steam the cakes over boiling water (212°F/100°C) for 10 minutes, until they are heated through and the banana leaves have softened slightly.
  7. 7Remove the steamer from the heat. Let the sweet rice cakes cool slightly in the steamer for about 5 minutes before you unwrap them. Serve the sweet rice cakes warm.
