Ingredients

  • 1 cup Sweet potato, boiled and mashed
  • 0.75 cup Lentil flour (besan)
  • 0.25 cup Rice flour
  • 1 tbsp Green chilies, finely chopped
  • 1 tbsp Curry leaves, chopped
  • 1 tsp Ginger, grated
  • 0.5 tsp Cumin seeds
  • 0.5 tsp Salt
  • 2 cups Vegetable oil

Instructions

  1. 1In a bowl, combine mashed sweet potato, lentil flour, rice flour, green chilies, curry leaves, ginger, cumin seeds, and salt.
  2. 2Mix well to form a dough. Add a little water if needed.
  3. 3Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  4. 4Shape the dough into small, flat discs.
  5. 5Gently drop the vadai into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. 6Remove vadai with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  7. 7Serve hot with chutney or ketchup.
