Instructions

  1. 1Preheat your oven to 400°F (200°C). Wash the 2 large sweet potatoes thoroughly under running water, then use a vegetable peeler to remove all of their skin.
  2. 2Carefully cut each peeled sweet potato lengthwise into 1/4-inch (0.6 cm) thick sticks, resembling fries.
  3. 3In a large mixing bowl, combine the cut sweet potato sticks with the 2 tablespoons of olive oil, 1 tablespoon of fresh rosemary, 1/2 teaspoon of sea salt, and 1/4 teaspoon of black pepper. Toss with your hands or a spoon until all the sweet potato sticks are evenly coated.
  4. 4Arrange the seasoned sweet potato sticks in a single layer on a large baking sheet, ensuring that no pieces overlap. This will help them crisp evenly during baking.
