Ingredients

  • 2 large Sweet potatoes, peeled and cut into fries
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Mayonnaise (ensure gluten-free)
  • 1 tbsp Chipotle peppers in adobo sauce, minced
  • 1 tsp Lime juice

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, combine the 2 large sweet potatoes (cut into fries), 2 tbsp olive oil, 1 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper. Toss everything together until the sweet potato fries are evenly coated.
  3. 3Spread the coated sweet potato fries in a single layer on a baking sheet. Ensure they are not overlapping so they can crisp up properly.
  4. 4Bake for 20-25 minutes. After about 10-12 minutes, carefully flip the fries to ensure even cooking. The fries are done when they are golden brown and feel crispy to the touch.
  5. 5While the fries are baking, prepare the chipotle aioli. In a small bowl, whisk together the 1/2 cup mayonnaise, 1 tbsp minced chipotle peppers in adobo sauce, and 1 tsp lime juice until well combined.
  6. 6Serve the baked sweet potato fries immediately with the prepared chipotle aioli for dipping.
