Ingredients

  • 2 medium Sweet Potatoes
  • 1 pound Chicken Sausage (nut-free)
  • 1 large Bell Pepper (any color)
  • 1 medium Onion
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Optional: Fried eggs for topping

Instructions

  1. 1Peel and dice the sweet potatoes into small cubes. Dice the bell pepper and onion. Mince the garlic. Slice the chicken sausage into rounds.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add the sweet potatoes, bell pepper, and onion to the skillet and cook for 8-10 minutes, stirring occasionally, until slightly softened.
  4. 4Add the chicken sausage and garlic to the skillet and cook for another 5-7 minutes, stirring occasionally, until the sausage is browned and the sweet potatoes are tender.
