Ingredients

  • 2 medium Sweet Potatoes
  • 2 ripe Plantains
  • 1/2 medium Red Onion
  • 2 tablespoons Coconut Oil
  • 1 teaspoon Curry Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 cup Coconut Flakes

Instructions

  1. 1Heat coconut oil in a large skillet over medium heat.
  2. 2Add the red onion and cook until softened, about 5 minutes.
  3. 3Add the sweet potatoes and plantains and cook, stirring occasionally, until tender and slightly browned, about 15-20 minutes.
