Ingredients

  • 1 large Sweet potato
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 15 oz can Black beans
  • 1 cup Corn
  • 1 cup Dairy-free cheddar cheese
  • 8 Corn tortillas
  • 1 Avocado
  • 1/2 cup Dairy-free sour cream

Instructions

  1. 1Preheat oven to 400°F (200°C). Toss the diced sweet potato with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  2. 2In a bowl, combine the roasted sweet potato, black beans, and corn.
  3. 3Sprinkle dairy-free cheddar cheese over half of each corn tortilla. Top with the sweet potato mixture and fold the tortilla in half.
  4. 4Heat a large skillet or griddle over medium heat. Cook the quesadillas for 3-4 minutes per side, or until golden brown and the cheese is melted.
  5. 5Serve immediately with avocado and dairy-free sour cream (if using).
