Ingredients

  • 24 wrappers Dumpling Wrappers
  • 1 large Sweet Potato
  • 1 can (15 oz) Black Beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1 tbsp Soy Sauce (or Tamari)
  • 1/2 cup Vegetable Broth
  • 1 tbsp Sesame Oil

Instructions

  1. 1Bake the sweet potato until soft, about 45 minutes at 400°F (200°C). Let cool slightly, then peel and mash.
  2. 2Rinse and drain the black beans.
  3. 3Dice the onion and mince the garlic.
  4. 4Heat sesame oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 3-5 minutes.
  5. 5Add the mashed sweet potato, black beans, chili powder, cumin, and soy sauce or tamari to the skillet. Mix well.
  6. 6Place a dumpling wrapper on a flat surface. Add a spoonful of the sweet potato mixture to the center.
  7. 7Moisten the edges of the wrapper with water. Fold the wrapper in half to form a crescent shape, pressing to seal.
  8. 8Bring a pot of vegetable broth to a boil. Add the dumplings and cook for 5-7 minutes, until they float to the surface and are cooked through.
  9. 9Serve immediately.
