Ingredients

  • 1 large Sweet Potato
  • 1 can Black Beans
  • 0.5 medium Red Onion
  • 0.5 cup Cornmeal (Gluten-Free)
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • 2 tbsp Olive Oil
  • 4 each Gluten-Free Buns
  • 1 medium Avocado
  • 0.5 cup Salsa

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Bake sweet potato for 45-60 minutes, or until soft. Let cool slightly.
  3. 3Mash sweet potato in a large bowl.
  4. 4Add black beans, diced red onion, gluten-free cornmeal, chili powder, and cumin to the bowl. Mix well.
  5. 5Form mixture into 4 patties.
  6. 6Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until browned and heated through.
  7. 7Serve on gluten-free buns with avocado and salsa.
