Swedish Yellow Pea Soup with Ham (Ärtsoppa med Skinka)

Ingredients

  • 2 cups Yellow split peas
  • 8 cups Water
  • 1 large Ham hock
  • 1 medium Onion
  • 2 tablespoons Mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Rinse the yellow split peas thoroughly.
  2. 2In a large pot, combine the split peas, water, ham hock, and onion.
  3. 3Bring to a boil, then reduce heat and simmer for at least 90 minutes, or until the peas are very soft and the ham is tender.
  4. 4Remove the ham hock from the pot. Shred the ham and return it to the soup.
  5. 5Season with salt and pepper. Serve with Swedish mustard on the side.
