Ingredients

  • 4 medium Potatoes, peeled and grated
  • 0.5 cup All-purpose flour
  • 2 tbsp Flaxseed meal
  • 6 tbsp Water
  • 1 cup Milk
  • 0.5 tsp Salt
  • 2 tbsp Butter, for frying

Instructions

  1. 1Combine flaxseed meal and water. Let sit for 5 minutes to form a gel.
  2. 2In a large bowl, combine grated potatoes, flour, flaxseed mixture, milk, and salt.
  3. 3Heat butter in a large skillet over medium heat.
  4. 4Drop spoonfuls of potato mixture into the hot skillet and flatten slightly.
  5. 5Cook for 3-4 minutes per side, or until golden brown and cooked through.
  6. 6Serve immediately with lingonberry jam or bacon.
