Sukuma Wiki and Chapati Wraps

Ingredients

  • 2 cups All-purpose flour
  • 1 cup Water
  • 1/2 tsp Salt
  • 2 tbsp Vegetable oil
  • 1 bunch Collard greens
  • 1 medium Onion
  • 1 medium Tomato
  • 2 cloves Garlic
  • 1/2 cup Vegetable broth
  • 1/4 tsp Cayenne pepper

Instructions

  1. 1Prepare the chapati dough: Mix flour, water, salt, and 1 tbsp oil. Knead until smooth. Let rest for 15 minutes.
  2. 2Prepare sukuma wiki: Heat remaining oil in a pan. Sauté onion and garlic until fragrant.
  3. 3Add chopped tomatoes and cook until softened.
  4. 4Add chopped collard greens and vegetable broth. Season with salt and cayenne pepper.
  5. 5Cover and simmer until greens are tender, about 20-25 minutes.
  6. 6Divide chapati dough into balls. Roll each into a thin circle.
  7. 7Cook chapati on a hot griddle until golden brown, flipping occasionally.
  8. 8Fill each chapati with sukuma wiki and roll up. Serve warm.
