- 1Pat the 2 lbs of beef chuck dry with paper towels. Season the beef chuck with the 1/2 tsp of salt and 1/4 tsp of pepper.
- 2Heat the 2 tbsp of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, which is about 375°F (190°C). Carefully add the seasoned 2 lbs of beef chuck to the hot oil. Brown the beef on all sides for about 3-4 minutes per side, until a nice brown crust forms.
- 3Remove the browned 2 lbs of beef chuck from the pot and set it aside on a plate. Do not clean the pot.
