Stir-Fried Yak Cheese with Mixed Vegetables

Ingredients

  • 1 lb Yak cheese
  • 1 cup Broccoli florets
  • 1 cup Cauliflower florets
  • 1 cup Bell peppers (mixed)
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Soy sauce
  • 2 tbsp Vegetable oil
  • 1/4 tsp Red pepper flakes

Instructions

  1. 1Cut the 1 lb yak cheese into 1-inch cubes.
  2. 2Heat the 2 tbsp vegetable oil in a 12-inch skillet or wok over medium-high heat, which is about 375°F (190°C).
  3. 3Add the 3 cloves of minced garlic and the 1 medium chopped onion to the hot oil. Sauté for 2-3 minutes, stirring constantly, until the garlic is fragrant and the onion is softened and lightly golden.
  4. 4Add the 1 cup broccoli florets, 1 cup cauliflower florets, and 1 cup mixed bell peppers to the skillet. Stir-fry for 5-7 minutes, tossing frequently, until the vegetables are tender-crisp – they should still have a slight bite.
  5. 5Add the 1 lb cubed yak cheese and the 2 tbsp soy sauce to the skillet. Toss everything together to coat the cheese and vegetables evenly.
  6. 6Continue to stir-fry for another 3-5 minutes. Watch for the 1 lb yak cheese to become slightly melted and gooey, and ensure the vegetables are well coated with the soy sauce.
  7. 7Sprinkle the 1/4 tsp red pepper flakes over the mixture, if you are using them, and toss one last time to distribute.
  8. 8Serve the stir-fried yak cheese and mixed vegetables hot immediately.
