Stir-Fried Fava Beans with Spiced Butter

Ingredients

  • 1 lb Fava Beans (shelled)
  • 3 tbsp Niter Kibbeh (Ethiopian Spiced Butter)
  • 0.25 Red Onion
  • 2 cloves Garlic
  • 0.5 Green Chili (finely chopped)
  • 0.25 tsp Salt

Instructions

  1. 1If using fresh fava beans, blanch them in boiling water for 1 minute, then transfer to an ice bath. Peel the beans.
  2. 2Heat niter kibbeh in a large skillet over medium heat.
  3. 3Add red onion and garlic to the skillet. Stir-fry for 2-3 minutes until fragrant.
  4. 4Add fava beans and green chili to the skillet. Stir-fry for 8-10 minutes, until the beans are tender and heated through.
  5. 5Season with salt and serve hot.

Substitutions

Niter Kibbeh

Use clarified butter mixed with garlic, ginger, turmeric, cumin, coriander and cardamom if you don't have niter kibbeh.
