Stamppot with Smoked Sausage (Egg-Free)

A hearty Dutch mashed potato dish with kale and smoked sausage. This version is made without egg binders, relying on the starch of the potatoes for creaminess.

Ingredients

  • 2 lbs Potatoes, peeled and quartered
  • 1 lb Kale, chopped
  • 1 lb Smoked sausage (rookworst), sliced
  • 0.5 cup Milk (dairy or plant-based)
  • 2 tablespoons Butter (dairy or plant-based)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Apple cider vinegar

Instructions

  1. 1Boil potatoes in salted water until tender, about 20 minutes.
  2. 2While potatoes are boiling, steam or saute the kale until wilted, about 5-7 minutes.
  3. 3In a separate pan, cook the smoked sausage slices until heated through and slightly browned.
  4. 4Drain the potatoes and return them to the pot.
  5. 5Mash the potatoes with milk and butter until smooth. Stir in the apple cider vinegar.
  6. 6Fold in the kale and season with salt and pepper.
  7. 7Serve the stamppot topped with the smoked sausage.
