Sri Lankan Parippu (Dhal Curry)

Ingredients

  • 1 cup Red Lentils
  • 1 can Coconut Milk
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1 small Green Chilies
  • 8 leaves Curry Leaves
  • 1/2 tsp Turmeric Powder
  • 1/4 tsp Cumin Powder
  • 1/4 tsp Mustard Seeds
  • 1/2 tsp Salt
  • 1 tbsp Vegetable Oil

Instructions

  1. 1Rinse the red lentils in water.
  2. 2In a pot, combine the lentils with coconut milk, chopped onion, garlic, ginger, green chilies, curry leaves, turmeric powder, cumin powder, and salt.
  3. 3Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils are soft and the curry has thickened.
  4. 4In a small pan, heat vegetable oil over medium heat.
  5. 5Add mustard seeds and let them splutter.
  6. 6Pour the mustard seed oil over the lentil curry and stir well.
  7. 7Serve hot with rice or roti.
