Sri Lankan Dhal Curry with Spinach

Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 tbsp Coconut oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 Green chilies
  • 10 Curry leaves
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 can Coconut milk
  • 5 oz Spinach
  • 1 tsp Salt
  • 1 tbsp Lime juice

Instructions

  1. 1Rinse the red lentils in a colander.
  2. 2In a pot, combine lentils with water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  3. 3While lentils are cooking, heat coconut oil in a separate pan. Add diced onion and sauté until translucent.
  4. 4Add minced garlic, grated ginger, chopped green chilies, and curry leaves. Sauté for another minute until fragrant.
  5. 5Add turmeric powder, cumin powder, and coriander powder. Sauté for 30 seconds.
  6. 6Pour the spiced mixture into the pot with the cooked lentils.
  7. 7Add coconut milk and spinach. Stir well and simmer for 5 minutes, or until spinach is wilted.
  8. 8Season with salt and lime juice.
