Ingredients

  • 1 cup Red Lentils
  • 2 tbsp Coconut Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 1 small Green Chilies
  • 1/2 tsp Turmeric Powder
  • 1 tsp Curry Powder
  • 1 can (13.5 oz) Coconut Milk
  • 1 cup Water
  • 1 tsp Salt
  • 4 Dairy-Free Roti

Instructions

  1. 1Rinse red lentils in a fine-mesh sieve.
  2. 2Heat coconut oil in a pot or Dutch oven over medium heat.
  3. 3Add onion, garlic, ginger, and green chilies and cook until fragrant, about 3 minutes.
  4. 4Add turmeric powder and curry powder and cook for 30 seconds.
  5. 5Add lentils, coconut milk, and water, and season with salt.
  6. 6Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes, or until lentils are tender and the curry has thickened.
  7. 7Serve hot with dairy-free roti.
