Sri Lankan Dhal Curry (Parippu)

Ingredients

  • 1 cup Red lentils
  • 2 cups Water
  • 1/2 cup Coconut milk
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 small Green chili
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Curry powder
  • 5 leaves Curry leaves
  • 1 tablespoon Coconut oil
  • 1 teaspoon Salt

Instructions

  1. 1Rinse the red lentils in cold water.
  2. 2In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until lentils are soft.
  3. 3Add coconut milk, onion, garlic, green chili, turmeric powder, curry powder, curry leaves, and salt.
  4. 4Heat coconut oil in a small pan. Add cumin seeds and let them splutter. Pour this over the lentils.
  5. 5Simmer for another 5 minutes, stirring occasionally.
  6. 6Serve hot with rice.
