Sri Lankan Dhal Curry (Parippu)

A classic Sri Lankan lentil curry, flavorful and comforting. This dairy-free version uses coconut milk for creaminess. Gluten-free.

Ingredients

  • 1 cup Red lentils
  • 2 cups Water
  • 2 tbsp Coconut oil
  • 1 small Onion
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 small Green chilies
  • 0.5 tsp Turmeric powder
  • 1 tsp Curry powder
  • 0.5 can Coconut milk
  • 5 leaves Curry leaves
  • 1 tsp Salt

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the lentils are softened.
  3. 3Heat coconut oil in a separate skillet over medium heat.
  4. 4Add onion, garlic, ginger, and green chilies and cook until softened, about 5 minutes.
  5. 5Stir in turmeric powder and curry powder and cook for 1 minute more.
  6. 6Add the cooked lentils to the skillet and stir to combine.
  7. 7Pour in coconut milk and add curry leaves. Season with salt.
  8. 8Simmer for 10 minutes, or until the sauce has thickened slightly.
  9. 9Serve warm with rice or roti.
