Ingredients

  • 1 lb Shrimp (peeled & deveined)
  • 2 tbsp Creole Seasoning
  • 2 tbsp Olive Oil
  • 1 medium Onion (diced)
  • 1 medium Green Bell Pepper (diced)
  • 2 stalks Celery (diced)
  • 3 cloves Garlic (minced)
  • 1 14.5 oz can Canned Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 1/2 cup Vegetable Broth
  • 1 tsp Hot Sauce
  • 12 shells Vegan Tart Shells

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Toss shrimp with Creole seasoning and 1 tbsp olive oil.
  3. 3In a large skillet, heat remaining olive oil over medium heat. Sauté onion, bell pepper, and celery until softened (about 5-7 minutes).
  4. 4Add garlic and cook for 1 minute more.
  5. 5Stir in diced tomatoes, tomato paste, vegetable broth, and hot sauce. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  6. 6Add the seasoned shrimp to the sauce and cook until pink and opaque (about 3-5 minutes).
  7. 7Spoon the shrimp creole mixture into the vegan tart shells.
  8. 8Bake for 10-12 minutes, or until the tart shells are lightly golden.
  9. 9Let cool slightly before serving.
