Ingredients

  • 1 lb Large Shrimp, peeled and deveined
  • 1 cup Okra, cut into 1-inch pieces
  • 2 tbsp Olive Oil
  • 2 tbsp Cajun Spice Blend (ensure gluten-free)
  • 1 tbsp Lemon Juice
  • 2 cloves Garlic, minced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1In a medium bowl, combine the 2 tablespoons of olive oil, 2 tablespoons of Cajun Spice Blend, 1 tablespoon of lemon juice, 2 cloves of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Whisk these ingredients together until they are well combined.
  2. 2Add the 1 pound of large shrimp (peeled and deveined) and the 1 cup of okra (cut into 1-inch pieces) to the bowl with the marinade. Toss everything gently to ensure the shrimp and okra are evenly coated.
  3. 3Carefully thread the marinated shrimp and okra pieces onto skewers. Alternate between shrimp and okra pieces for an even distribution.
  4. 4Preheat your grill to medium-high heat. This is approximately 400-450°F (200-230°C).
  5. 5Place the skewers on the preheated grill. Cook for 2 to 3 minutes per side. The shrimp should turn pink and opaque, and the okra should become tender. For shrimp, aim for an internal temperature of 145°F (63°C) if you have a thermometer.
