Ingredients

  • 1 lb Shrimp
  • 1 cup Grits
  • 2 cans Coconut Milk
  • 2 cups Water
  • 1/2 cup Onion
  • 1/2 cup Bell Pepper
  • 2 cloves Garlic
  • 1/4 small Scotch Bonnet Pepper
  • 2 sprigs Thyme
  • 2 tbsp Coconut Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Peel and devein the shrimp. Dice the onion and bell pepper. Mince the garlic and Scotch bonnet pepper.
  2. 2In a saucepan, combine coconut milk and water. Bring to a boil, then whisk in the grits. Reduce heat and simmer, stirring frequently, until the grits are creamy and thickened, about 20-25 minutes.
  3. 3While the grits are cooking, heat coconut oil in a skillet over medium heat.
  4. 4Add the onion, bell pepper, garlic, and Scotch bonnet pepper to the skillet and sauté until softened.
  5. 5Add the shrimp and thyme to the skillet and cook until the shrimp are pink and cooked through, about 5-7 minutes.
  6. 6Season with salt and black pepper.
  7. 7Serve the shrimp over the creamy grits.
