Ingredients

  • 1 lb Spicy Italian sausage
  • 2 medium Sweet potatoes
  • 1 can (15 oz) Black beans
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 can (14.5 oz) Diced tomatoes
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil

Instructions

  1. 1Peel the 2 medium sweet potatoes and cut them into 1/2-inch cubes. Open the 1 can (15 oz) black beans, rinse them thoroughly under cold water, and then drain them completely. Peel and chop the 1 medium onion into small pieces. Peel the 3 cloves garlic and mince them finely.
  2. 2Place a 12-inch skillet over medium-high heat (approximately 400°F / 200°C). Add the 1 lb spicy Italian sausage to the hot skillet and break it up with a spoon as it cooks, stirring occasionally, until it is fully browned and no pink remains, about 5-7 minutes. Carefully drain all of the excess fat from the skillet, then add the 1 tbsp olive oil to the skillet with the browned sausage.
  3. 3Add the cubed 2 medium sweet potatoes and the chopped 1 medium onion to the skillet. Continue to cook over medium-high heat (approximately 400°F / 200°C), stirring occasionally, for 5-7 minutes, until the onion is softened and the sweet potatoes begin to get lightly browned.
  4. 4Stir in the minced 3 cloves garlic, 1.5 tsp chili powder, 1 tsp cumin, 0.5 tsp smoked paprika, 0.5 tsp salt, and 0.25 tsp black pepper. Stir constantly for 1 minute, until the spices become fragrant and you can smell them strongly.
  5. 5Add the drained 1 can (15 oz) black beans and the 1 can (14.5 oz) diced tomatoes (including their liquid) to the skillet. Stir all the ingredients together thoroughly until well combined, then bring the mixture to a gentle simmer.
  6. 6Reduce the heat to medium-low (approximately 300°F / 150°C), cover the skillet with a lid, and let the mixture cook for 10-15 minutes. The sweet potatoes should be tender when you poke them with a fork.
